Recipe: Easy Banana Muffin Recipe

I have really been in a muffin baking kind of mood lately. They're one of my favorite things to eat for breakfast and thinking that I got some fruit in my diet somewhere makes me feel better about my bad eating habits. LOL Whenever people say that if you'd like to learn how to bake, start with cookies, I cringe a little. I'm no expert but I really think people should start with muffins. So if you're a newb, here's a five-star almost fool-proof recipe that I found through Google that I'd like to share with you. It also has a crumbly top that will make the muffins look professionally baked! ;)

You'll need your measuring cups and spoons and two mixing bowls. You don't really need a KitchenAid mixer, it is just very convenient. If you don't have a mixer, using a spatula or a wooden spoon should be fine. 

The original recipe said you can make 10 muffins with this recipe but I was able to make 11. I didn't mind that because I was going to give some to my mom and sister anyway.

You'll need:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter

Directions:
  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
  2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

I have accumulated an abundance of Kitchenaid appliances over the years; the blenders are my favorite. The Kitchenaid blender parts are so versatile which really helps keeps me on the healthy path.
