Cookies Make the World a Happier Place

I had a serious itching to bake the other day and because I was too lazy to drive to the store to get eggs, I Googled recipes for no egg cookies and found this! I only used five ingredients for the dough then added chocolate chips to create some variety.

I tried to take pictures of every step but I underestimated how much multi tasking I would be in some I was cooking pasta for our lunch the next day whole mixing the dough. Oops. I'll try to explain every step though!

Preheat the oven to 375F.
Cream butter and sugar. If you just got your stick of butter right out of the fridge, you can grate it so it creams easily. I used a mixer for this.
Next, heat up the water in the microwave for 15 seconds and then mix the baking soda until it's dissolved in the cup. After this, mix it with the cream and butter mixture. Add the flour and mix the dough until it's smooth. Fold in the oatmeal.
I scooped 1/3 of the dough an mixed it with White chocolate chips and scooped the other third into another bowl and mixed it with semi sweet chocolate chips. It turns out these cookies taste best with white chocolate chips!

Using a cookie scoop, scoop them and place them onto the baking sheet and flatten the top with a fork, making the diameter of the cookie 1.5-2 inches. Put it in the preheated oven and bake for 10 minutes.

After baking, put them on a wire rack to cool.

Then you can take pictures of the cookies ;)

I highly suggest you enjoy them while they're warm! A few minutes after taking three cookies to Ron who was in our bedroom that time, he yelled out, "Love, I want more! I'm coming down there!"

No Egg Oatmeal Cookies
1 stick butter
1/2 c. brown sugar
1 c. flour
1 c. old fashioned rolled oats
1/2 tsp. soda dissolved in 1/8 c. hot water
white chocolate chips (optional)

Cream butter and sugar. Add water with baking soda dissolved. Add flour and oats. Mix until blended. Fold in chocolate chips. Roll dough into balls. Flatten with a fork dipped in flour. Bake at 375 degrees.
